On the nose, you’ll notice ripe black plum, blackberry, and dark cherry, complemented by a hint of sweet basil, warm oak spice, and a touch of ginger. This inviting aroma leads to a palate packed with juicy dark cherry, black currant, and raspberry jam, rounded out by subtle notes of vanilla and mild milk chocolate on the finish.

    There are some wines that are just made for specific occasions, this one is made for all occasions - it’s structure is versatile enough to pair well with a variety of foods - I’m thinking carne asada tacos. The flavors focus more on fruit, with hints of herbs and a some oak influence on the finish.

    While I might reach for something else as I cut into a filet mignon, this is an easy one to grab for pizza night or taco Tuesday, or to bring to a party. It’s not so earth and mineral driven that California wine lovers might pass on, but, conversely, it’s not a jammy fruit bomb that overwhelms the palate - it’s a great balance between the two.

    My first instinct when thinking of pairings is grilled Mediterranean faire - grilled meats and vegetables, then tacos or something with a fresh component, and of course red sauce dishes (eggplant parmesan) or pizzas!

    This Paso Cellars Cabernet Sauvignon is a great Tuesday night wine and versatile enough to bring to a casual party.
